Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Potato Waffles.
Hope you have all had a great Monday – it’s the start of the working week for me and I’m always super organised. Breakfast prepped, healthy packed lunch prepared, outfit for the next day ironed and looked out. Unfortunately this doesn’t last much past Wednesday for me and by Thursday and Friday I’m pretty much in disorganised chaos. Anyone else like that or is it just me?
It has been so cold today I’m really hoping it isn’t going to snow – when it snowed last year it took me about 4 hours to get home from work rather than the usual 14 minute train ride so fingers crossed it won’t be a repeat of that this year.
Tonight’s recipe is for a real kiddy favourite – potato waffles! The best bit of the potato is always the crispy top you get from a dish like Shepard’s Pie – these waffles are all about the crispy bit with a lovely fluffy potato filling. Perfect for a tasty lunch or as a side to any dinner or actually you could have these for breakfast with poached eggs and avocado.

Potato Waffles (Gluten & Dairy Free)
Description
Make your own potato waffles using fluffy mashed potatoes
Ingredients
Instructions

Bring a pan of water to the boil and add the potatoes

Boil for 15 minutes or until the potatoes are tender

Drain away the water and place the potatoes in a bowl

Mash the potatoes and stir in the dairy free milk, dairy free spread, dairy free cheese andĀ gluten free plain flour

Season with salt and pepper

Stir until well combined and then divide into 8 balls

Preheat the waffle iron

Grease the waffle iron with some cooking spray

Cook each ball of mashed potato until crisp, about 7 minutes
