Hello everyone, todays recipe is for Gluten and Dairy Free Spicy Prawn Soup. It’s that time for year when one minute it is brilliant sunshine and the next it is freezing. A big bowl of hearty soup is still on the menu for those colder days.
At least it has been sunny today and we’ve been able to spend time in the garden. It’s is my Mum’s birthday today so we’ve enjoyed a nice lunch. Tomorrow I’m hoping to spend a decent amount on the building the new website.

Spicy Prawn Soup (Gluten & Dairy Free)
This Gluten and Dairy Free Spicy Prawn Soup is perfect for lunch as a light dinner, you can adjust the amount of spice to suit you.
Add the olive oil into a saucepan over a medium heat
Saute the pepper, onion and garlic for 5 minutes
Stir in the sriracha, paprika, passata, vegetable stock, basil and thyme
Bring to the boil
Stir in the rice and simmer for 8 minutes
Add in the prawns and cook for another 5 minutes or until the rice and prawns are cooked
Season to taste
Divide between two bowls and serve
