Hello everyone, welcome to my latest recipe for this delicious Gluten Free and Dairy Free Seared Beef Panzanella Salad. This is a traditional Italian dish where stale bread is soaked in a mixture of olive oil and vinegar. It is usually served with tomatoes and onion, sometimes cucumber. My recipe is a little different and I’ve added in some spinach, roasted peppers and some seared beef. I had this outside in the garden for dinner at the weekend to enjoy the last of the sunny weather.

Seared Beef Panzanella Salad (Gluten Free, Dairy Free)

Heat a shallow pan or grill pan over a high to medium heat. Spray lightly with cooking oil and add in the pepper chunks and gluten free baguette slices. Cook a couple of minutes on each side and remove from the heat.

Season the beef with salt and pepper. Add in the thin cut steaks and cook for a couple of minutes on each side

Whisk together the olive oil, apple cider vinegar, lemon juice and minced garlic.

In a large bowl place the spinach, tomatoes, red onion, cucumber.

Cut the baguette slices into chunks and the steak into thin strips. Add into the bowl and pour over the dressing.

Divide between two bowls and serve topped with some fresh oregano or basil
