Hello everyone, welcome to my latest recipe for Gluten Free & Vegan Chocolate Mousse. I’ve been wanting to experiment with aquafaba and try out a recipe like this for ages now. I eventually got round to it at the weekend and was impressed with the results. For some reason I was a bit sceptical about turning something from a can of chickpeas into a delicious dessert.
As the aquafaba is pretty delicate just make sure you are taking care when folding in your chocolate. Take your time and try to remove as little of the air as possible. That way you will achieve a fluffy mousse texture.

Chocolate Mousse (Gluten Free & Vegan)
Ingredients
Instructions

Whisk the aquafaba until peaks form with an electric mixer - this takes about 5 minutes

Carefully fold in the melted chocolate and icing sugar making sure not to deflate the aquafaba

Spoon into four small jars and chill in the fridge for a couple of hours before serving
