Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Peppermint Crunch Truffles.

Hope you are all having a good week so far. It is the start of a global fitness challenge at work this week. Lots of companies have signed up round the world, you get into little teams of seven and record how much exercise and steps you have done each day.

It all gets a bit competitive but is good fun. I didn’t have the best start to the challenge as I got a lift to work as I went via the hospital. I still managed to beat my 10,000 step target so not too bad.

Now I’ve talked a little bit exercise I feel I can share a chocolate recipe.  These truffles reminded me of Viscount biscuits I used to get when I was a little girl for an after dinner treat.

Peppermint Crunch Truffles (Gluten & Dairy Free)

Difficulty: Beginner Prep Time 20 mins Cook Time 5 mins Total Time 25 mins
Servings: 10
Best Season: Winter

Description

Dark chocolate minty truffles with a smooth and crunchy centre

Ingredients

Instructions

  1. Place the cookies in a blender with the dairy free cream cheese and mint extract

  2. Blend until it forms a soft cookie dough like consistency

  3. Roll into 10 small balls

  4. Chill in the freezer for 10 minutes

  5. Melt the dairy free dark chocolate and then dip each of the truffles in

  6. Remove them with a fork and place on a piece of parchment paper

  7. Return to the freezer for 10 minutes

  8. Melt the dairy free white chocolate and drizzle over the truffles

Note

* I used Tesco free from sandwich creams
