The final recipe this week is for these super tasty (and easy) BBQ chicken bowls. You can really mix this recipe up and add in any vegetables and/or meat you like. I used onion, peppers and green beans as my veggie choice only because it is what I had in fridge when I made this.
The first time I made this dish I served it with roast potatoes and sesame green beans. This time I served it on a bed of rice – works well either way.
For whatever reason I just couldn’t get this dish to look nice when I photographed it – such is life.

BBQ Chicken Bowls (Gluten Free, Dairy Free)
Description
A filling bowl of rice, chicken and vegetables in a BBQ sauce that is also gluten free and dairy free
Ingredients
Instructions

Place the olive oil in a shallow pan over a medium heat

Add in the garlic, onion, pepper, green beans and chicken

Stir fry for 10 minutes

Stir in the BBQ sauce and simmer for 5 minutes

Divide the cooked rice between two bowls and top with the BBQ chicken
