Greek Tomato Fritters (Gluten & Dairy Free)
Fresh tomato fritters make a perfect start to your Greek themed dinner
Saute the onion and garlic in a shallow pan over a medium heat until soft, about 3-5 minutes
Place the onion, diced, tomatoes, oregano, thyme and parsley in a large bowl
Season to taste
Stir in the flour, water and lemon juice to form a batter
Chill for 30 minutes in the fridge
Add a drizzle of olive oil to a shallow pan over a medium heat
Add one tablespoon of mix for each fritter into the pan
Cook for 2 minutes on each side, or until golden
Serve with a fresh salad and lemon wedge
