Welcome to my latest recipe for Gluten Free and Dairy Free Apple & Sultana Breakfast Cakes.
I’ve been working on a few new gluten free and dairy free breakfast recipes which I’ll share with you over the coming few weeks. The most successful have been omelette waffles, mini pancake muffins and these apple and sultana breakfast cakes.
They are a little like Welsh cakes, if you have ever made them, but flavoured with apple purée and sultanas instead. If I was to describe them they are more scone like than pancake and taste great with a little dairy free spread.

Apple & Sultana Breakfast Cakes (Gluten Free, Dairy Free)
A little like a Welsh griddle cajke but with apples and sultanas
In a large mixing bowl combine the egg, apple sauce, cinnamon, flour, baking powder and sultanas
Shape into four flat cakes
Heat a drizzle of olive oil over a low to medium heat in a large shallow pan
Cook the cakes for 5 minutes on each side
