Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Tomato, Serrano Ham and Melon Salad.

I’ll be truthful and say salad isn’t the top on my list of favourite food items.  I also think I’ll be hungry after having salad for lunch or dinner and it might not be as tasty as an alternative soup or sandwich.  It’s kind of a false memory as every time I get round to making a salad they are also delicious and more then enough for lunch.

This salad bowl is packed full of flavour from the sun dried tomatoes, Serrano ham, citrusy dressing, melon and fresh basil.  Inspired by my enjoyment of this recipe I’ve also created a lovely rocket pasta salad I’ll share in the next few weeks which is perfect for a packed lunch or quick dinner.

Tomato, Serrano Ham and Melon Salad (Gluten & Dairy Free)

Ingredients

For the dressing:

Instructions

  1. In a large bowl mix together the tomatoes, melon, cucumber, basil, Serrano ham and salad leaves
  2. Make the dressing by whisking together the lemon juice, olive oil, caster sugar and seasoning
  3. Pour over the salad and enjoy
