Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Baked Mac & Cheese Bites.
I made these Mac N Cheese Bites for lunch last weekend served with a some sweet chilli tomato relish. As usual, I ate far too many of them and probably ended up eating about a dinner portion of pasta.
Don’t worry of you can’t get gluten free macaroni. I couldn’t so I just used fusilli and it worked out fine.
These would be great at a party or as a side dish when it is BBQ season again. Next time I make these I’m going to add in some extra bits and pieces maybe sun-dried tomatoes and bacon.

Baked Mac & Cheese Bites (Gluten & Dairy Free)
Description
Your favourite mac and cheese turned into a mini sized party food
Ingredients
Instructions
-
Preheat the oven to 180 oC

Grease a 6 hole muffin tin

Cook the pasta according to the instructions on the packet

Drain away the water and return to the pan
-
Stir in the dairy free spread and egg
-
Pour in the milk and the garlic puree
-
Stir in two thirds of the cheese and season with salt and pepper
-
Divide amongst the 6 muffin cups
-
Sprinkle the breadcrumbs and remaining cheese on top
-
Bake in the oven for 30 minutes

Allow to sit for a couple of minutes before removing from the muffin moulds
-
Serve with a tomato dipping sauce
