Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Baked Mac & Cheese Bites.

I made these Mac N Cheese Bites for lunch last weekend served with a some sweet chilli tomato relish.  As usual, I ate far too many of them and probably ended up eating about a dinner portion of pasta.

Don’t worry of you can’t get gluten free macaroni.  I couldn’t so I just used fusilli and it worked out fine.

These would be great at a party or as a side dish when it is BBQ season again.  Next time I make these I’m going to add in some extra bits and pieces maybe sun-dried tomatoes and bacon.

Your favourite mac and cheese turned into a mini sized party food

Ingredients

Instructions

  1. Preheat the oven to 180 oC
  2. Grease a 6 hole muffin tin
  3. Cook the pasta according to the instructions on the packet
  4. Drain away the water and return to the pan
  5. Stir in the dairy free spread and egg
  6. Pour in the milk and the garlic puree
  7. Stir in two thirds of the cheese and season with salt and pepper
  8. Divide amongst the 6 muffin cups
  9. Sprinkle the breadcrumbs and remaining cheese on top
  10. Bake in the oven for 30 minutes
  11. Allow to sit for a couple of minutes before removing from the muffin moulds
  12. Serve with a tomato dipping sauce
