Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Honey Parsnip Soup.
A quick recipe to make with your leftover Christmas parsnips. You can have this prepared ahead of time or ready in about 40 minutes for lunchtime. I’ve added in some honey to perfectly compliment the flavour of the parsnip. If you want to make this soup vegan then the honey can be swapped out for maple syrup.

Honey Parsnip Soup (Gluten & Dairy Free)
Ingredients
Instructions

Put a drizzle of olive oil in a large pan over a medium heat

Add the onions, chilli flakes and garlic and sauté for 5 minutes

Stir in the potato, parsnips, stock and honey
-
Bring to the boil and simmer for 25 minutes or until the vegetables are tender

Season with salt and pepper

Blend until smooth
