Mini Baked Lemon Donuts (Gluten Free, Dairy Free)

Instructions

Preheat the oven to 180 oC

Grease a mini donut silicone tray (I got mine in Lakeland)

Beat the dairy free spread and caster sugar until light and fluffy

Beat in the eggs and milk
-
Stir in the flour, lemon juice and zest
-
Place the donut batter in a piping bag and pipe into the silicone tray

Bake in the oven for 10 minutes

Toss in caster sugar and extra lemon zest while still hot
-
