Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Peppermint Hot Chocolate.

t’s not been the best of week’s – I’ve been struggling with illness for the last ten days and even had to take two days off work.  Turns out I have pneumonia but I’m definitely on the mend now I have the right medication and some rest and relaxation.

I’ve nearly finished all my Christmas recipe posts for this year – just one more cake left to bake and photograph which I’ll do this weekend.  That leaves me feeling pretty good that the website is all set up and ready to go for the rest of the month.

I’ve tried this year to keep the recipes focused on simple ideas that don’t take a long time to put together as everyone is so busy at this time of year.  My peppermint hot chocolate recipe is perfect for cozy afternoon’s in when you are either putting up the Christmas tree or wrapping presents.

This Christmas I’ve purchased some dairy free squirty cream (by SoyaToo) from my local health food shop so I can make a few special drinks at home.

  1. Place the dairy free milk in a small saucepan and bring to the boil

  2. Turn down the heat and whisk in the hot chocolate syrup and peppermint extract

  3. Pour into a mug and add any toppings you like from crushed candy canes to marshmallows
