Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Chicken Noodle Salad. I made this lovely chicken noodle salad a couple of weeks ago when my friend was visiting for my birthday. It was definitely a hit so I decided to type up the recipe and share it with you.
You can prep the sauce, veggies and chicken ahead of time if that suits you. You can then quickly cook the noodles and assemble the dish for a very easy dinner.

Chicken Noodle Salad (Gluten Free, Dairy Free)
Ingredients
For the salad:
For the sauce:
Instructions

Cook the noodles per the instructions on the packet. Rinse in cold water and set aside to cool.

Add the olive oil to a pan over a medium to high heat. Cook the chicken for 10 minutes or until cooked through. Season with salt and pepper.

Place all the ingredients for the sauce into a small saucepan and bring to the boil. Stir the sauce until thickened, about 3-5 minutes and then set aside to cool.

Add the chopped vegetables, coriander leaf, peanuts, noodles and chicken into a large bowl. Pour in the sauce and stir until well combined.
