Hello everyone, today’s recipe is for one of my favourite lunches – Gluten and Dairy Free Chicken Club Pasta Salad. It is a perfect idea to prep ahead if you are having a busy day or take with you on the go. When things open up a bit after lockdown I’m planning on making this dish as part of some summer picnics or for a barbecue side dish. 

I’m currently typing out this post while I’m on the exercise bike. I’m trying to be a bit more active – lockdown has made me lazy. I’m taking part in a virtual challenge to walk or cycle from Lands End to John O’Groats. I’m a 150 miles in so far so about another 900 miles to go!

Ingredients

Instructions

  1. In a large bowl place the smoked bacon, chicken, gluten free pasta, pepper, onion, dairy free cheese and cherry tomatoes

  2. In a smaller bowl stir together the mayo, dairy free natural yoghurt, olive oil, lemon juice, basil and minced garlic

  3. Season with salt and pepper

  4. Pour the dressing over the pasta salad and mix until the pasta is well coated
