Hello everyone, it’s time to share a new dinner recipe and I’ve gone with my Gluten Free and Dairy Free Creamy Chicken and Leek Pasta Bake. I’m a big fan of chicken and leek as a savoury flavour. I have a couple of delicious recipe already on the website one for Gluten and Dairy Free Chicken and Leek Soup and another for Gluten and Dairy Free Chicken & Leek Pies.
I wanted to make this into a pasta dish which I originally envisaged would be made with spaghetti. I love pasta but of all the gluten free pastas available I find spaghetti the hardest to cook. It can often stick together if you don’t look after it while cooking. I ended up making this as a past bake dish instead.
I used gluten free penne pasta in a dairy free chicken and leek sauce. I topped it with some dairy free cheese and baked it in the oven for a melted crispy top. A perfect weeknight dinner served with some free from garlic bread and salad.

Chicken and Leek Pasta Bake (Gluten Free, Dairy Free)
Try out my new recipe for Gluten Free and Dairy Free Chicken and Leek Pasta Bake perfect served with some garlic bread
Cook the pasta according to the instructions on the packet and set aside
Heat some olive oil in a saucepan
Add chopped leak and cook for 2 minutes
Add the diced chicken, replace the lid and cook for 20 minutes stirring occasionally
Add the flour and stir until the chicken is coated
Add the stock and stir until thickened
Stir in the cream, seasoning and basil until bubbling then remove from the heat
Mix in the cooked pasta
Pour into a casserole dish and top with the dairy free cheese
Heat under the grill for a couple of minutes
