Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Cheese and Tomato Salad.

I’m off work this week so taking the opportunity to get caught up on the website.  I’ve being doing more food photography and recipe development than I usually would over the last few months.  I think it’s a combination of the light being better at night and saving time from the commute home that makes me more likely to do a proper dinner that can actually be photographed.  I have zero training in photography so although my photos have improved a lot since I started the website they can still be a bit of a hit or miss.  One day I really must do a proper course to learn what I should be doing.

I’m sure this salad has a proper name but it is some what similar to a panzanella or fattoush salad but I’ve just called it cheese and tomato!  It is full of fresh summer salad items and bulked up with some toasted gluten free pitta bread strips for a complete lunch.

Ingredients

Instructions

  1. Preheat the oven to 180 oC
  2. Tear the pitta into bite sized chunks
  3. Place on a baking sheet and bake in the oven for 15 minutes or until crisp and golden
  4. Allow to cool
  5. Combine the pitta, tomatoes, cucumber, onion, cheddar and rocket
  6. Whisk together the olive oil and apple cider vinegar
  7. Drizzle over the salad and serve
