Hello everyone, welcome to my latest recipe for Gluten and Dairy free Spiced Parsnip and Carrot Soup.
A perfect recipe for the ridiculously cold weather. I made this soup to use up the excess carrot and parsnips I had after Christmas.
As both carrot and parsnip have a natural sweetness I’ve added some curry spices to this soup to balance out the flavours.

Spiced Parsnip and Carrot Soup (Gluten & Dairy Free)
Ingredients
Instructions

Heat the olive oil in a large saucepan over a medium heat

Add in the onion and garlic and saute for 5 minutes

Stir in the curry powder, carrots and parsnips

Pour in the vegetable stock and bring to the boil

Simmer for 30 minutes

Blend until smooth and season to taste
