Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Chicken Pasta Soup.

I know the weather has been amazing but for some reason I’ve been craving soup at lunchtime.  Over the last few weeks I’ve made a spiced red lentil soup, tomato soup and this delicious chicken pasta soup.  I don’t know about you but I feel like I’m hungry all the time.  It might be something to do with the fact I’ve chosen my work at home space to be the kitchen.  It comes with all the benefits of a huge table to spread my stuff out on, amazing light from the patio doors but most important easy access to the fridge!

If you are looking for something hearty and filling this soup is perfect – a big bowl with some garlic bread would also make a tasty dinner.

  1. Add the olive oil into a large pan over a medium heat
  2. Add in the onion and garlic and sauté for 5 minutes
  3. Stir in the tomato purée and chilli flakes
  4. Add the chopped tomatoes, chicken stock and pasta
  5. Simmer for 10 minutes or until the pasta is cooked
  6. Stir in the cubed cooked chicken, dairy free cheese, oregano and seasoning
  7. Cook for a couple of minutes and then serve
