Hope you all had a relaxing weekend. I got a few odd jobs done round the house and tackled the massive pile of ironing that I’ve accumulated over the last few weeks. I’m still not grown up enough to be in control of ironing – I only do it when I’ve worn all my favourite clothes in the wardrobe. Enough chat about house working – I’m worried lockdown is making me boring!
At the moment I’m obsessed with sriracha sauce and I’m in the mindset that no matter what I add it to it makes it taste better. The other morning I had this delicious bagel with sriracha scrambled egg, sliced avocado and crispy smoked bacon. The perfect start to any morning.

Sriracha Egg Bagels w/ Bacon & Avo (Gluten Free, Dairy Free)
Cut the bagels in half and toast until golden
Fry the bacon until crisp
Whisk together the eggs, dairy free milk, sriracha and seasoning
Melt the dairy free spread in a small saucepan over a medium heat
Pour in the egg mix and push around until scrambled
Layer up the bagels with the avocado, bacon and eggs
