Hello everyone, welcome to my latest easy weeknight meal recipe for Gluten and Dairy Free Tomato & Chicken Sausage Risotto. I had some lovely gluten free Italian chicken sausages in the fridge and had originally planned on making a pasta bake. I changed my mind at the last minute and decided to make this easy risotto instead. If I get round to making that pasta bake I’ll be sure to share it on here.

Tomato & Chicken Sausage Risotto (Gluten Free, Dairy Free)
Ingredients
Instructions

Put the olive oil and garlic in a large pan and saute over a medium heat for 1 minute

Add in the sausages and onion and cook for 5 minutes

Stir in the risotto rice

Mix together the passata and vegetable stock and add one ladle at a time stirring until the liquid is fully absorbed

Taste the rice to make sure it is properly cooked, add more liquid if required

Stir though the dairy free cheese, season with salt and pepper and add the Italian herbs
