Hello everyone, my latest recipe is for this delicious Gluten and Dairy Free Spiced Butternut Squash Soup. I’m exciting we are heading into Spring and I can start to work on some new seasonal recipes. It is still cold enough in Scotland to enjoy a warming bowl of soup so thought I would share this recipe. This also works well substituting the butternut squash with either sweet potatoes or pumpkin. You can also make a double batch of this soup and pop the rest in the freezer for another day.

Spiced Butternut Squash Soup (Gluten Free, Dairy Free)
Ingredients

Peel and chop the butternut squash into 1 cm cubes

Add the olive oil to a large pan over a medium heat. Add in the onion, garlic and sriracha. Saute for 5 minutes.

Add in the butternut squash and coconut milk. Bring to the boil and simmer for 15 minutes or until the butternut squash is tender.

Stir in the lime juice, fresh coriander and season to taste. Blend until smooth.
