Baked Beans, Poached Egg and Chorizo (Gluten Free, Dairy Free)
Dice the chorizo into small chunks
Gently sauce in a small saucepan for a couple of minutes
Bring a pan of water to the boil then reduce to a simmer
Crack in each egg and poach for 3-6 minutes depending on how runny you like your yolk
Heat the beans in the microwave for 2-3 minutes
Split the beans between the 2 bowls, top with the poached eggs, chorizo and sprinkle over the chives
