Hello everyone. welcome to my latest baking recipe for this Gluten and Dairy Free Lemon Drizzle Traybake. I made this quick and easy traybake last weekend to take round to my parents house. The cake comes together quickly and bakes in about 25 minutes – perfect if you are having a busy day.
I’m currently working on a couple of new baking recipes. One for another traybake recipe with dairy free white chocolate, marshmallows and popcorn. The other for some mango and passionfruit cupcakes. Hopefully they both work out well and you will see them on the website soon.

Lemon Drizzle Traybake (Gluten Free, Dairy Free)
For the cake:
For the glaze:
Preheat the oven to 180 oC and line a 8" by 8" cake tin with parchment paper
Place all the cake ingredients into a large bowl and beat until well combined
Pour into the cake tin and smooth out
Bake in the centre of the oven for 25 minutes
Remove from the oven and allow to cool for 10 minutes
Mix together the icing sugar and lemon juice and drizzle over the top of the cake
Allow to cool completely, remove from the cake tin and then top with the lemon zest before cutting into squares
