Hello everyone, I made this delicious Gluten and Dairy Free Chocolate Strawberry Traybake for my family BBQ on Saturday. I couldn’t decide whether to share this recipe on my Gluten and Dairy Free Strawberry Trifle recipe first. Thanks to everyone on Instagram who voted with 67% of you picking this chocolate cake recipe. I think I’ll do that again next week – it is always nice to engage with everyone and hear what you want to see on the website.
This recipe is pretty simple to make and it bakes in 40 minutes. The cake sponge mixture can be made in one bowl in about 5 minutes. If you want to make this a layer cake you can divide the mixture between two 6″ round cake tins and reduce the cooking time to 25 minutes. The frosting can then be used to sandwich the cakes together.
For those of you that wanted to see the strawberry trifle recipe, don’t worry I’ll post that soon.

Chocolate Strawberry Traybake (Gluten & Dairy Free)
For the chocolate sponge:
For the topping:
Preheat the oven to 180 oC
Cream the dairy free spread and sugar together for a couple of minutes until light and fluffy
Add the eggs one at a time, beating well after each addition
Add the flour, cocoa, baking powder and ground rice/almonds and beat well to combine
Add in the dairy free milk and mix in
Line a 8" square cake tin
Pour the mixture into the cake tin
Place in the oven and bake for 40 minutes
Remove the cake from the oven and cake tin and allow to cool on a wire rack
To make the chocolate icing beat together the melted dark chocolate and dairy free spread
Gradually add the icing sugar until it forms a soft fudge texture
Spread on top of the cake and top with the strawberies and a drizzle of melted dairy free white chocolate
