Hello everyone, welcome to my latest delicious dinner recipe for this Gluten Free and Dairy Free Herby Spatchcock Chicken. I made this for dinner a couple of weeks ago when my sister, brother-in-law and niece visited for dinner. It went down a treat with everyone so I thought I would share the recipe as it is really simple to put together.
It has been such a busy few weeks. I’ve had a friend staying, celebrated my 40th birthday, been down to visit friends in London and also started back in the office a couple of days. It was so nice to change routine from working at home and great to see my colleagues face to face after all this time.
I’m hoping to find a couple of hours tonight to focus on getting caught up on the website. I have a few exciting recipes that I need to type up and share.

Herby Spatchcock Chicken (Gluten Free, Dairy Free)
Ingredients
Instructions

Preheat the oven to 180 oC

Mix together the dairy free spread/butter, parsley, thyme, rosemary, minced garlic and lemon rind

Place the spatchcock chickening a roasting pan and season with salt and pepper

Cover in the herby butter
-
Roast in the oven for 70 minutes or until the juices run clear

I served mine with coleslaw, fries, sweetcorn and salad
