Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Potato, Bacon and Cabbage Bake.
It was proper windy and wet today so I spent the morning doing a bit of website prep. Unfortunately I forgot to type up the last recipe of the week – so sorry it is so late in the day. I did a bit of baking this afternoon and made some chocolate crinkle cookies which I’ll share the recipe for next week. The weather is to be better tomorrow so hoping to get out and about a bit.
Tonight’s recipe is a real winter warmer and made from the simplest ingredients. Potatoes, cabbage and smoked bacon are baked in a (dairy free) creamy sauce. A cheap and cheerful recipe for your winter recipe book.

Potato, Bacon and Cabbage Bake (Gluten Free, Dairy Free)
Preheat the oven to 180 oC
Parboil the potato slices for 5 minutes, drain and set aside
Place the olive oil in a shallow pan over a medium heat
Saute the onion, garlic, bacon and cabbage for 5 minutes
Season to taste
In a casserole dish layer the potatoes and cabbage mix
Pour the dairy free cream into the casserole dish and sprinkle on the grated dairy free cheese
Bake in the oven for 30 minutes
