Hello everyone, welcome to my latest summer recipe for Lemon Iced Tea.
I seem to have added a lot of cold drinks to the website recently. I think it has been a result of it being so hot this summer. Amongst all the smoothies, juices and iced lattes I realised I didn’t have any iced tea recipes.
This is really easy to make, it is just tea and lemon juice mixed with the sweetener of your choice. A big jug of this in the fridge is always welcome when it is roasting hot outside. Unfortunately as I write this it is raining so after moaning about it being too hot I’m now complaining I miss the sun.

Lemon Iced Tea
Place the lemon juice and honey/maple syrup/caster sugar in a saucepan over a medium heat
Simmer for 5 minutes stirring occasionally
Remove from the heat and allow to cool
Place the boiling water and tea bags in a jug
Allow the tea to steep for 20 minutes
Remove the tea bags
Stir in the lemon syrup, sliced lemon and chilled water
Serve in glasses with ice
