Morning everyone, hope you are having a relaxing Sunday. I had some leftover dairy free chocolate sauce from another recipe and a punnet of strawberries in the fridge so I decided to make some crepes for breakfast.

Strawberry and Chocolate Crepes (Gluten Free, Dairy Free)
For the crepes:
For the chocolate sauce:
Start making the chocolate sauce by placing the chocolate, cocoa powder, brown sugar and milk in a saucepan
Place over a medium heat and stirring until the ingredients are melted and well combined
Bring to the boil and then simmer for 5 minutes, set aside to cool slightly
Mix the flour and sugar together
Add the egg and beat well
Gradually add the milk stirring until a smooth batter is formed
Heat a little olive oil in a shallow pan over a medium heat
Pour in a small amount of the batter, just enough to cover the base of the pan
Cook for about 2 minutes on each side
Remove the crepe from the pan and spread on some of the dairy free chocolate sauce
Fold into quarters and top with strawberries and a little more chocolate sauce
