Huevos Rancheros (Gluten Free, Dairy Free)
Ingredients
Instructions

Heat the olive oil over a medium heat

Add in the onion, pepper, chilli and garlic

Saute for about 5 minutes until soft

Stir in the chopped tomatoes, oregano and basil

Season with salt and pepper

Cook for a further 5 minutes

Make two small holes in the tomato mix and crack an egg into each hole

Cook for another 5 minutes or until the eggs are set
