I started to make a stollen but panicked it wouldn’t work out well enough so made these cupcakes as a back up. Luckily both turned out well so watch this space for my stollen recipe coming soon.

Instructions

  1. Preheat the oven to 180 oC and line a 8 hole muffin tin with paper cases

  2. Beat together the dairy free spread and caster sugar until light and fluffy

  3. Beat in the eggs one at a time and stir in the flour

  4. Fill each muffin case a third full and bake in the oven for 20 minutes

  5. Remove from the oven and allow to cool completely

  6. Make the frosting by beating together the dairy free spread, icing sugarĀ and melted dairy free dark chocolate

  7. Pipe onto the cupcakes and decorate with two pretzel antlers and a red jelly bean noseĀ
