Hello, welcome to my latest Christmas recipe for Gluten and Dairy Free Lebkuchen. This little cookies (or are they cakes?) take a little time to make but are definitely worth the effort. I chose to both glaze mine and dip the base in some dairy free dark chocolate.

Lebkuchen (Gluten Free, Dairy Free)
Ingredients

Place the dairy free spread, treacle, honey and brown sugar into a small saucepan over a low heat for a couple of minutes until melted together

Place the ground almonds, gluten free flour and mixed spice into a large bowl and stir in the treacle mix

Mix in the beaten egg, almond extract, lemon zest and orange zest

Wrap in clingfilm and leave to chill in the fridge for a couple of hours

Preheat the oven to 180 oC and dust the worktop with a little icing sugar and roll out the dough to about 1.5cm thick

Preheat the oven to 180 oC

Bake for 15 minutes and place on a wire rack

Stir together the icing sugar, lemon juice and enough water to make a thin glaze

Brush the cookies with the glaze while they are still warm then leave to cool completely

Melt the dairy free dark chocolate in a shallow dish and dip the base of each cookie into the chocolate

Leave the chocolate to set and you can then decorate your cookies, I used some melted white chocolate and a sprinkle of Christmas trees
