Morning everyone, here is my latest breakfast recipe for Gluten Free and Dairy Free Rhubarb Granola Pots. Rhubarb always makes me think of my Grandma. She used to grow it in the garden and it was the best rhubarb ever. Every time I buy rhubarb nowadays is always more green rather than the ruby red colour I remember.
These breakfast pots are great little ideas to prep ahead. You can make the rhubarb on the weekend and store it in the fridge to use during the week.

Rhubarb Granola Pots (Gluten Free, Dairy Free)
Ingredients

Cut the rhubarb into half inch stalks and place in a saucepan. Sprinkle on the cast sugar and add a splash of water. Cook over a low to medium heat until the rhubarb is soft and falling apart, about 10 minutes.

Allow the rhubarb to cool, I usually prep it the night before and allow it to chill in the fridge overnight.

Divide the yoghurt, rhubarb and granola between 8 jars and enjoy for an easy breakfast.
