Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Penne Amatriciana.
I haven’t shared a pasta recipe for a little while so I thought I would upload my recipe for Penne Amatriciana. It’s a simple tomato sauce with garlic, chilli and bacon. It always makes me think of having this dish when I visited Antibes – it was the hottest day of the year – it was something like 40 degrees and I ordered Amatriciana for lunch – unfortunately it was very heavy on the chilli so the combo of the spicy pasta and the intense heat I thought I was going to burst into flames. Usually I do love it as a dish, that day was the exception!

Penne Amatriciana (Gluten Free, Dairy Free)
Ingredients
Instructions

Add the pancetta, onion, garlic and chilli to a shallow pan over a medium heat

Saute for 5 minutes or until the pancetta is crisp and the onion soft

Add the tin of tomatoes, oregano and season with salt and pepper

Simmer gently for 10 minutes

Stir in the cooked pasta and serve
