Valentine Chocolate Cakes (Gluten Free, Dairy Free)
For the cakes:
For the frosting:
Preheat the oven to 180 oC
Grease a mini cake or muffin tin moulds
Beat together the caster sugar and the dairy free spread until light and fluffy
Add the three eggs individually, beating well between each addition
Add in the flour, cocoa and baking powder
Mix until well combined
Pour into the mould until about half full
Bake in the oven for 20 minutes
Remove from the moulds and allow to cool completely
Cut the cakes into thirds
Make the frosting by beating together the dairy free spread and icing sugar until light and fluffy
Sandwich the layers together with the frosting and decorate the tops
