Hello everyone, welcome to my latest baking recipe for Gluten and Dairy Free Lemon Bars.
I went to my first Christmas activity last night – a quick trip to the Christmas market after work followed by an amazing dinner out. It is always great when a place totally gets coeliac and really caters for you. We went to a Lebanese restaurant where they supplied me with gluten free pitta breads and made sure I had all my own dips and sides so there was no cross contamination.
I’ve had lemon bars on my to do list for nearly the full five years that I’ve had the website so it was about time I finally got around to making them! They turned out to be much easier to make than expected and I think they will become a new regular in my house.

Lemon Bars (Gluten & Dairy Free)
Description
Get into the kitchen and try out my new baking recipe for Gluten and Dairy Free Lemon Bars
Ingredients
For the base:
For the lemon filling:
Instructions

Preheat the oven to 180 oC
-
Line an 8” by 8” cake tin with foil
-
Rub together the flour, caster sugar and dairy free spread
-
Press into the base of the tin and bake for 15 minutes
-
Make the filling by whisking together the eggs, lemon zest, lemon juice, caster sugar and flour

Pour onto the base and cook for 30 minutes
-
Allow to cool, remove from the cake tin and sprinkle with icing sugar

Trim the edges and cut into 9 bars
