Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Bacon & Avocado Stuffed Omelette.
What a week – I’m absolutely shattered and looking to just chilling out with my friend who is visiting from London. I also need to spend sometime pulling together new recipes for the website.
I haven’t really found a shop bought gluten free tortilla wrap that I love. I find they tend to be a little dry even if I try heating them in the microwave or in a pan.
I often make these filled omelettes as an alternative to breakfast burritos. They can be made really quickly in the morning and are a great start to the day. These omelettes also make a great quick lunch or dinner with a bowl of fries.

Bacon & Avocado Stuffed Omelette (Gluten Free, Dairy Free)
Whisk together the eggs, dairy free milk and seasoning
Heat a drizzle of olive oil in a shallow pan over a medium heat
Pour in the egg mix and move the pan back and forward until the base is fully coated
Cook for 2 minutes then flip and cook for a minute
Fill with the bacon, salsa, cheese and avocado
Fold in half and serve
