For the salad:

Heat a drizzle of olive oil in a frying pan over a medium heat

Fry the pitta squares until golden brown

Set aside to cool

Make the dressing by whisking together the garlic, lemon juice, olive oil and parsley

Place the tomato, cucumber, pepper, onion and pitta in a bowl

Stir in the dressing and season with salt and pepper
