Hello everyone, looking for a tasty lunch idea then try out my recipe for Gluten and Dairy Free Easy Mexican Chicken Wraps. I don’t know about you but I still find lunch ideas the hardest to think of. Breakfast and dinner I find easy but always end up ending a lot of soup at lunchtime. This year I must spend some time developing a few new ideas for my light bite section.

Instructions

  1. Place the olive oil, chicken, pepper, onion and garlic into a shallow pan over a medium heat

  2. Saute for 7 minutes

  3. Stir together the tomato puree, boiling water and fajita paste

  4. Pour into the pan and cook for another 5 minutes or until the chicken is cooked

  5. Add the tortilla wraps to a shallow pan and cook for minute or so on each side until warmed and slightly toasted

  6. Divide the chicken between the two tortilla wraps and top with a little fresh coriander
