Hello everyone, my latest Christmas recipe is for this delicious Gluten and Dairy Free Stollen. I made this a couple of weeks ago for my Dad’s birthday and was really pleased with the results. I’ve done about 6 or 7 years of Christmas recipes on the website now and I’ve had stollen on my to do list for most Christmas and never got round to it. So proud of myself for finally getting round to actually making one.

  1. Place the sultanas and dried cranberries in a bowl with the lemon zest, orange zest and spiced rum, set aside

  2. Stir together the lukewarm dairy free milk and yeast, leave for 10 minutes

  3. In a large bowl place the gluten free flour, brown sugar, dairy free spread, egg and the dried fruit mixture

  4. Knead with an electric dough hook for about 5 minutes, cover with clingfilm and leave in a warm place for an hour or until doubled in size

  5. Roll the marzipan into a rectangle about 30cm by 10cm and the dough to 30cm by 20cm

  6. Place the marzipan on top of the dough and fold the dough over to seal shut

  7. Leave to proof for 30 minutes

  8. Preheat the oven to 180 OC and bake the stollen for about 45 minutesĀ 

  9. Leave to cool, brush with the melted dairy free spread and then dust with icing sugar, a little cinnamon and the flaked almonds
