  1. Preheat the oven to 180 oC
  2. Make a slice into the side of the chicken to create a small pocket but don't cut all the way through
  3. In small bowl stir together the dairy free spread, garlic paste and half the parsley
  4. Stuff the garlic mixture into the chicken breasts
  5. Place the egg in a small bowl and whisk
  6. In another bowl add the polenta, seasoning and the remaining parsley
  7. Dip each chicken breast into the egg and then roll in the polenta until well coated
  8. Place in an oven proof dish and bake for 30 minutes
