Hello everyone, welcome to my latest warming autumn recipe for Gluten and Dairy Free Red Thai Sweet Potato Soup. I often make this soup after I’ve had red Thai chicken curry to use up any leftover curry paste and coconut milk.
I’m feeling a bit sorry for myself this evening. Due to some Ehlers Danlos related problems I’ve ended up with a perforated ear drum. I was looking forward to doing some sewing today but the noise of the sewing machine is not the friend of the injured ear. I’ll resort to sitting on the couch with a bowl of this soup instead.

Red Thai Sweet Potato Soup (Gluten Free, Dairy Free)
Ingredients
Instructions

Place the olive oil in a large pan over a medium heat

Add in the onion and garlic and saute for 5 minutes

Stir in the red Thai curry paste and allow to cook for a couple of minutes

Add in the sweet potatoes, chopped tomatoes, coconut milk and vegetable stock
-
Bring to the boil and simmer for 20 minutes or until the sweet potatoes tender

Season to taste and blend until smooth
