Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Egg, Avocado & Proscuitto Wrap. This a super quick recipe to prepare and uses ingredients that are naturally gluten and dairy free. The idea behind it was replacing a traditional tortilla wrap with one made from egg to save on time in the morning.

Egg, Avocado & Proscuitto Wrap (Gluten Free, Dairy Free)
Description
This a super quick recipe to prepare and uses ingredients that are naturally gluten and dairy free.Ingredients
Instructions
-
Heat, on a medium to high heat, a drizzle of olive oil in a 20cm frying pan

In a small bowl beat the egg

Add the seasoning and mixed herbs

Pour the egg into the pan, it will naturally spread into a circular shape

Cook for about 1 minute, the underside of the egg should be lightly browned and easy to flip over

Flip the egg and cook for another minute
-
Remove from the frying pan and lay two slices of proscuitto ham onto the egg

In a small bowl add the avocado, lemon juice, coriander, seasoning and mash into a smooth paste
-
Spread over the ham
-
Starting at one end tightly roll up the wrap
