Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Egg, Avocado & Proscuitto Wrap. This a super quick recipe to prepare and uses ingredients that are naturally gluten and dairy free. The idea behind it was replacing a traditional tortilla wrap with one made from egg to save on time in the morning.

Egg, Avocado & Proscuitto Wrap (Gluten Free, Dairy Free)

Difficulty: Beginner Prep Time 5 min Cook Time 5 min Total Time 10 mins Servings: 1 Best Season: Suitable throughout the year

Description

This a super quick recipe to prepare and uses ingredients that are naturally gluten and dairy free.

Ingredients

Instructions

  1. Heat, on a medium to high heat, a drizzle of olive oil in a 20cm frying pan

  2. In a small bowl beat the egg

  3. Add the seasoning and mixed herbs

  4. Pour the egg into the pan, it will naturally spread into a circular shape

  5. Cook for about 1 minute, the underside of the egg should be lightly browned and easy to flip over

  6. Flip the egg and cook for another minute

  7. Remove from the frying pan and lay two slices of proscuitto ham onto the egg

  8. In a small bowl add the avocado, lemon juice, coriander, seasoning and mash into a smooth paste

  9. Spread over the ham

  10. Starting at one end tightly roll up the wrap
