Today’s breakfast idea for Smoked Mackerel and Poached Eggs is a bit different but really quick to put together. When I prepared this for breakfast a couple of weeks ago the smell of the mackerel definitely appealed to Ollie cat.
I’m always on the look out for new breakfast recipes. I’m not sure why but it is my favourite section in my website and the one I tend to develop most recipes for. You would think it would be something more exciting like desserts or cakes and cookies but for some strange reason it is breakfast. Smoked Mackerel and Poached Eggs (Gluten Free, Dairy Free)
Ingredients
Instructions

Bring a pan of boiling water to a gentle boil

Turn down to a simmer and crack in the eggs

Simmer for 3 minutes

Remove from the pan with a slotted spoon

Toast the gluten free bread
-
Heat the mackerel in the microwave for 1 minute
-
Top the toasted bread with the mackerel, poached eggs, chives and season with salt and pepper
