Hello everyone, today’s recipe is for a Thai favourite of mine – Prawn Panang Curry. It is naturally gluten and dairy free which makes a great dish to source the ingredients for. It is also really quick to put together making it a great choice for a week night meal.
Hope you all managed to find some suitable gluten and dairy free pancake recipes to make yesterday. I went with chocolate chip and made them for a treat pudding rather than at breakfast time.

Heat the olive oil in a shallow pan over a medium heat

Add the onion and red pepper and cook for 5 minutes

Stir in the curry paste and cook for another 5 minutes

Mix in the sugar and fish sauce

Pour in the coconut milk and bring to the boil

Simmer for 15 minutes

Add in the prawns and cook for about 4 minutes

Top with the kaffir lime leaves and crushed peanuts

Serve with rice
