Tonight’s recipe is for Broccoli Bacon Mac and Cheese – a real bowl of comfort food.  It might be a bit cheeky of me calling it Mac and Cheese as I’ve made it with fusilli pasta.  None of the supermarkets near me stock gluten free macaroni – its odd as I thought that would be a popular choice.

I’ve made a simple dairy free cheese sauce and stirred through some pasta, smoked bacon and broccoli.  An easy option to make for a quick, but tasty, week night meal.

Broccoli Bacon Mac & Cheese (Gluten Free, Dairy Free)

Description

Gluten Free and Dairy Free Broccoli Bacon Mac & Cheese is a twist on the traditional mac and cheese. It makes a quick week night meal.

Ingredients

Instructions

  1. Preheat the oven to 180 oC

  2. Cook the pasta per the instructions on the packet and set aside

  3. Place the olive oil in a shallow pan over a medium heat

  4. Add the smoked bacon, brocolli, onion and garlic

  5. Saute for about 7 minutes or until the bacon is crisp and the broccoli tender

  6. Set aside

  7. Make the cheese sauce by placing the dairy free spread into a pan over a medium heat

  8. Stir in the gluten free flour until it forms a smooth paste

  9. Gradually pour in the dairy free milk and stir continuously until the sauce comes to the boil

  10. Stir in 2/3 of the dairy free cheese and season with salt and pepper

  11. Mix together the broccoli, cooked pasta and cheese sauce

  12. Pour into a casserole dish and top with the remaining cheese

  13. Bake for 20 minutes
