Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Prawn Fajita Bowl.
This bowl of delicious prawn fajitas actually came from a load of substitutes I got in my weekly shopping at the start of lockdown. Obviously the shops were struggling to get and maintain stock when people were buying more than they normally would.
I ordered the ingredients to make chicken fajitas but got neither the chicken or gluten free tortillas. I was grateful for some prawns I already had in the freezer and turned what I had of the original ingredients to make the planned meal into this tasty prawn fajita bowl. It was a hit and I’ll definitely add it into one of my regular go to meals.

Prawn Fajita Bowl (Gluten Free, Dairy Free)
Cook the brown rice according to the instructions on the packet, this usually takes about 20 minutes
Heat a drizzle of olive olive in a shallow pan over a medium heat
Add in the onion and peppers and sauté for 5 minutes
Add in the prawns and fajita seasoning and cook for another 3 minutes
Divide the rice between two bowls
Top with the prawn mix, avocado, tortilla chips, rocket and salsa
