Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Caramel Apple Cake.
Happy Mother’ Day to my mum! This year we celebrated it a day early as my Mum and Dad are heading away to Spain for a week on an amazing trip. We went out for a family lunch at our local pub which has a great gluten free menu with lots of options they can easily adapt to be dairy free as well. I opted for chicken fajitas complete with gluten free flour tortillas – delicious.
Today’s recipe is for a gluten and dairy free salted caramel apple cake I made a few weeks ago. I love the combination of salted caramel and apple – I’ve made some cupcakes with these flavours before and wanted to try out a larger cake recipe. A slice of this heated in the microwave for 30 seconds makes a perfect dessert.
For Mother’s Day this year I actually made some tiramisu cupcakes which I’ll share the recipe for next week.

Caramel Apple Cake (Gluten & Dairy Free)
Ingredients
For the apple cake:
For the frosting:
Instructions

Preheat the oven to 180 oC and line and grease a 9″ round cake tin

Beat together the eggs and two types of sugar

Add in the oil and beat well

Stir in the flour and cinnamon and mix until well combined

Mix in the chopped apples
-
Pour the cake mixture into the lined/greased baking tin and bake in the centre of the oven for 75 minutes

Remove from the tin and allow to cool completely

Make the frosting by beating together the dairy free spread, icing sugar, caramel sauce and salt until light and fluffy

Spread on top of the cake and dust with a little cinnamon
