Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Cajun Lemon Salmon Spaghetti.
Hope you are all having a lovely weekend. It is a beautiful day here and we headed down to the beach at North Berwick. I had the most amazing gluten and dairy free burger with caramelised onion, coleslaw and fries at the local pub followed by a lemon sherbet vegan ice cream from the ice cream parlour.
I made this lovely spaghetti dish for my parents the last time they were over for dinner. I used the Co-op free from spaghetti, it cooks up really nicely without sticking together like some gluten free pasta can. I’ved flaked salmon through a Cajun and lemon sauce with roast tomatoes. Tastes amazing and best of all it is super quick and easy to put together.

Cajun Lemon Salmon Spaghetti (Gluten Free, Dairy Free)
Place the olive oil into a shallow pan over a medium heat
Add in the garlic and onion
Saute for 10 minutes
Add in the cherry tomatoes and cook for a couple of minutes
Microwave the salmon for 2 minutes, remove the skin and flake
Stir in the dairy free cream, chilli flakes, flaked salmon, lemon juice and Cajun seasoning
Cook for a couple of minutes
Season with salt and pepper
Stir though the cooked spaghetti and serve
