Welcome to my latest recipe for Gluten Free and Dairy Free Mango Coconut Pancakes. I have shared a tonne of gluten and dairy free pancake recipes over the last five years of having my website. I always wonder if you are getting sick of them but luckily enough they are always one of my popular posts. I usually get at least one message when I post a pancake recipe.
They are my favourite Sunday morning treat breakfast and you maybe excited (or bored) to know that I have a few new pancake recipes coming soon. Last weekend I made some lovely autumn pancakes that tasted exactly like carrot cake and I’m working on a chocolate pancake stuffed with a peanut butter centre.
Today’s tropical pancake recipes were inspired by having a some leftover mango in the fridge and a tonne of desiccated coconut in my baking cupboard. I hope you get the chance to try this as a little luxurious breakfast.

Mango Coconut Pancakes (Gluten Free, Dairy Free)
In a large bowl stir together the flour, coconut and caster sugar
Beat the egg and stir into the flour mix
Gradually whisk in the milk until you have a smooth batter
Heat a drizzle of oil in a shallow pan over a medium heat
Add a quarter of the mix into the pan and cook for a couple of minutes on each side
Repeat until you have cooked all the pancakes
Top with the mango and an extra sprinkle of coconut
